I just cooked my purple beans. They were such a deep purple. Eggplant-ish. And after being dunked in boiling water, now they're green. The water hasn't drastically changed colour though. Maybe a tinge of green, but not too different. Lazy way to tell if the beans have been cooked enough, I suppose.
I think this could turn into a fantastic elementary school lesson.
I still wish the beans stayed purple though.
